THE SIDEBAR blog exists to slow that question down and answer it honestly.

It’s where Chef Carl shares what he’s learning about North Carolina ingredients, seasonal cooking, and what it actually takes to make local eating work for tight schedules and intimate gatherings.

You’ll find things here like what’s coming into season and why it matters; how menus change when you cook closer to the source; what makes a good week of meals feel supportive instead of stressful; and how serving the right food lets hosts stay present instead of overwhelmed.
