Carl cooks meals that’s known to bring friends and family around the table on a regular.

I’m Chef Carl Welch Jr ~ a dad of four, a shameless foodie and, according to my wife, cooking is my real first love. I’m inspired by all kinds of cuisine but the heart of what I do is always Southern & North Carolina regional heritage. My menus draw from regional staples - seasonal vegetables, coastal seafood, pasture-raised meats, cornbread, heirloom recipes - balanced with lighter, modern takes.

I have nearly thirty years of prepared foods and restaurant experience. I’m fully insured, ServSafe certified, and now I want to use all this to connect us to the food of the state that made me.

I look forward to cooking the food that gathers your people around the table… in the Triangle, the Triad, the Sandhills, the Carolina Coast, wherever it takes me.

Grandma’s Hands

I’m a Tarheel to my heart ~ raised in Chapel Hill. I acquired my affection for cooking through my late grandmother, L. Elizabeth Bryson.

Those homemade staples like her chicken, fresh preserves, biscuits, and her sweet potato pie with coconut flakes always takes me back to those summers in her Apex country kitchen.

I’m telling you, my grandma could cook!

She was a farmer too. I remember we used to eat so many berries from her field until we got full of them. I was shocked at how fresh and cool those berries would be when they bursted in my mouth, even in the heat.

That’s why fresh, local ingredients mean so much to me. It hits home and I want to keep reliving that experience with food every time.
